Instructions
Preparation and Fermentation
Squeeze and juice the lemon, sweet limes (mausambis) and the limes along with some lemon skins and add them to the 1 litre jar.
Add 100 gms of sugar to the jar and give it a good shake.
Open and add one Probiotic Brew Bag to the jar.
Cover the jar with its lid and give it a good shake.
Now remove the lid and cover the jar with the cloth cover.
Keep it in a cool place away from direct sunlight for 4 to 8 hours.
Bottling & Carbonation
After 4 hours, the yeast should be active. Now you can remove the cloth cover and cover the jar with the lid.
Give everything a good shake.
Open the lid and pour the Limca probiotic from the jar into the bottles using a funnel.
Using the Carbonation Calculater, calculate the amount of sugar or honey you need per bottle and fill up your bottles and seal them shut. This will naturally carbonate your Limca probiotic, giving it that perfect fizzy kick. Again, keep the bottles in a cool place away from direct sunlight for 1 day.
Chill and Enjoy
After a day or two, refrigerate your Limca probiotic bottles. You’ll be able to enjoy a homemade Limca anytime the craving strikes!
Store them in the fridge, and they’ll stay fresh for up to a week. But honestly speaking—you won’t be able to resist finishing them sooner!
