Popping open our coffee probiotic

My friends and I love drinking Iced Americanos. So it was a no brainer when I came across the Thogarihunkal Estate by Tulum Coffee. I wanted to give it a try and make a fizzy probiotic out of it. Especially since it has flavours of Chocolate Jaggery and Peanut Brittle, some of my favourites. I ordered the Cold Brew variant since I prefer cold brewing. But Tulum Coffee sells this coffee and a variety of others in different options such as AeroPress, Channi (Tea strainer), Electric Drip Machine, Espresso, French Press, Moka Pot, Pour Over to suit your coffee brewing style.

This recipe works with any coffee of your choice as long as it isn't the instant stuff. Choose your favourite coffee and give this recipe a try. You wont regret it and once you make it there is no going back.

Instructions

Preparation and Fermentation

  1. We cold brewed 1 litre of coffee in the 1 litre jar for 18 hours in the fridge. You can use any coffee brewing method according to your preference to make 1 litre of a coffee base.

  2. Remove the jar from the fridge, filter your coffee if needed and allow your cold brew to settle to room temperature.

  3. Next open and add one Probiotic Brew Bag to the jar.

  4. Cover the jar with its lid and give it a good shake.

  5. Now remove the lid and cover the jar with the cloth cover.

  6. Keep it in a cool place away from direct sunlight for 4 to 8 hours.

Bottling & Carbonation

  1. After 4 hours, the yeast should be active. Now you can remove the cloth cover and cover the jar with the lid.

  2. Give everything a good shake.

  3. Open the lid and pour the probiotic from the jar into the bottles using a funnel.

  4. Using the Carbonation Calculater, Calculate the amount of sugar or honey you need per bottle and fill up your bottles and seal them shut. Again, keep the bottles in a cool place away from direct sunlight for 1 day.

Chill and Enjoy

  1. After a day or two, move the probiotics to your fridge. Drink them anytime you feel like having an iced americano.

  2. Keep them refrigerated and they are good for upto a week. But we doubt they will remain that long in your fridge after you taste the first one.
